Zucchini Bread - cooking recipe
Ingredients

2 2/3 c. sugar
3 c. shredded zucchini
4 eggs
3 1/3 c. all-purpose flour
1 1/2 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. baking powder
2/3 c. coarsely chopped nuts
2/3 c. shortening
2/3 c. water
2 tsp. baking soda
2 tsp. vanilla
1 tsp. ground cloves
2/3 c. raisins (can substitute canned pineapple with no juice)
Preparation

Heat oven to 350\u00b0.
Grease bottoms only of two 9 x 5 x 3-inch loaf pans.
Mix sugar and shortening in a 2 1/2-quart bowl.
Stir in zucchini, water and eggs.
Mix in flour, baking soda, salt, cinnamon, cloves, vanilla and baking powder.
Stir in nuts and raisins (or pineapple).
Pour into pans.
Bake until a wooden pick comes out clean when inserted in center, 60 to 70 minutes.
Cool 5 minutes.
