Ziti Alfredo With Vegetables - cooking recipe

Ingredients
    8 oz. ziti (or penne) pasta, cooked and drained
    1 Tbsp. extra-virgin olive oil
    1 medium onion, chopped
    2 large garlic cloves, crushed
    2 Tbsp. butter
    3 Tbsp. all purpose flour
    1 1/2 c. fat-free half-and-half
    1 c. fat-free milk
    1 c. grated Parmesan cheese
    2 tsp. dried Italian seasoning
    Salt and pepper, to taste
    1 (14.5 oz.) can diced tomatoes with Italian herbs
    1 (10 oz.) pkg. frozen chopped spinach, thawed, drained
Preparation
    In a large pot, cook pasta according to package directions. In a small saucepan, saute onions and garlic in olive oil till browned.
    In a large saucepan, melt butter, add flour and stir. Slowly, add half-and-half and milk and simmer, stirring constantly, till thickened.
    Add cheese and seasonings; stir till cheese melts.
    Add tomatoes, spinach and onion mixture; heat through.
    Pour over warm pasta, toss and serve.
    Leftovers can be refrigerated and reheated in the microwave.
