Baked Chicken A La Mushroom Sauce - cooking recipe

Ingredients
    1 roasting chicken
    1/4 c. flour
    1/2 tsp. salt
    1/8 tsp. pepper
    1/3 c. fat
    1/4 to 1/2 lb. fresh mushrooms
    2 c. cream
    grated rind of 1 lemon
    1 tsp. lemon juice
    1 1/2 Tbsp. cooking sherry (optional)
Preparation
    Disjoint chicken.
    Dip in seasoned flour and fry in fat until golden brown.
    Place in casserole.
    Cook mushrooms in the same skillet about 5 minutes.
    Add remaining ingredients; heat, then pour over chicken.
    Bake, covered, until chicken is tender (1 to 1 1/2 hours) and sauce is thick.
    Makes 6 to 8 servings.
