Veal Scallopini - cooking recipe

Ingredients
    2 garlic cloves, finely chopped
    3 oz. olive oil
    1 small onion, chopped
    3 lb. veal cubes
    1 c. chicken stock
    2 c. peeled tomatoes, crushed by hand
    1 tsp. oregano
    5 leaves fresh basil
    2 Tbsp. fresh chopped parsley
    2 green peppers, cut in strips
    salt and pepper to taste
Preparation
    In large saucepan, saute garlic and onion in oil until lightly browned.
    Add meat; stir for 4 minutes.
    Add stock; simmer over medium heat until stock is reduced.
    Add tomatoes and seasonings. Cook 5 minutes.
    Add peppers; cook until peppers are tender. Serves 6 to 8.
