Zucchini Oatmeal Cookies - cooking recipe

Ingredients
    1 egg
    1/3 c. canola oil
    1/2 c. granulated sugar
    1/2 c. brown sugar
    1 c. all-purpose flour
    1/4 tsp. baking soda
    1/4 tsp. salt
    1/4 tsp. cinnamon
    1/4 tsp. nutmeg
    1 1/4 c. oatmeal
    1 c. finely grated zucchini
Preparation
    Heat oven to 350\u00b0. Beat egg, oil and both sugars until well blended. Set aside. In separate bowl, combine flour and next 4 ingredients. Stir into egg mixture. Add oatmeal, zucchini and mix well. Drop by teaspoonfuls on nonstick cookie sheet, 2-inches apart. Bake 12 minutes or until golden. Makes 2 dozen.
