Hollandaise Sauce - cooking recipe

Ingredients
    3/4 c. melted butter
    5 beaten egg yolks
    1/2 c. boiling water
    3 Tbsp. lemon juice
    1/4 tsp. salt
    dash of cayenne pepper
Preparation
    Melt the butter over hot water.
    Remove from heat and cool. In the top of a double boiler, blend egg yolks into butter.
    Add boiling water slowly, stirring constantly, until thickened, over hot water.
    Remove from heat.
    Stir in lemon juice, salt and cayenne pepper.
    Yields 1 1/4 cups.
