Ingredients

3 eggs
2/3 c. sugar
1 c. cold mashed potatoes
2 Tbsp. melted butter
1 tsp. vanilla
3 c. sifted flour
3 tsp. baking powder
3/4 tsp. salt
1/2 tsp. nutmeg
1/4 c. milk
Preparation

Beat eggs well. Gradually beat in sugar. Stir in potatoes, butter and vanilla. Sift dry ingredients together. Add alternating with milk to cream mixture. Chill thoroughly. Roll out on lightly floured surface to 1/2-inch thick. Cut with 2 1/2-inch doughnut cutter. Fry in deep fat about 3 minutes. Once drained, frost or sugar.
