Ingredients

3 eggs
1 Tbsp. flour
2 c. sugar
1/2 c. melted oleo
1 1/2 tsp. vanilla
2/3 c. buttermilk
1 c. coconut
pecans (optional)
2 unbaked 9-inch pie shells (shallow)
pinch of salt
Preparation

Beat eggs and combine with buttermilk.
Add other ingredients and blend well.
Add 1 cup chopped pecans (optional).
Pour in an unbaked pie crust.
Bake for 10 minutes at 275\u00b0, then increase to 300\u00b0 and cook for about 50 minutes.
Do not overcook.
Cool, cut and enjoy.
