Potato Pancakes - cooking recipe

Ingredients
    2 eggs
    2 Tbsp. milk
    2 Tbsp. melted butter or oleo
    2 Tbsp. flour
    3/4 tsp. salt
    1/8 tsp. pepper
    1/4 small onion, sliced
    2 c. peeled raw potatoes, grated
Preparation
    Mix in all ingredients until well mixed.
    For each pancake, pour 1/4 cup mixture on hot well-greased griddle and spread into a 4-inch cake.
    Brown on first side; turn and brown on second side. Makes about 2 cups (8 pancakes).
