Broccoli And Beef Stir-Fry - cooking recipe

Ingredients
    2 tsp. dry sherry
    1/8 tsp. black pepper
    2 tsp. soy sauce
    1/2 tsp. salt
    1/2 tsp. sugar
    3/4 c. water
    2 tsp. cornstarch
    1/4 c. peanut oil
    3/4 lb. broccoli flowerets (broccoli stalks cut into diagonal 1/4-inch slices)
    1/2 lb. flank or round steak, sliced thinly across the grain in 1 1/2-inch long strips
Preparation
    Mix first 5 ingredients and 1/2 cup of water; set aside.
    Mix cornstarch with remaining 1/4 cup water; set aside.
    Heat 2 tablespoons oil in wok or shallow skillet until hot.
    Add broccoli stalks, sliced.
    Cover and cook 2 to 3 minutes.
    Add broccoli flowerets; cover and cook 2 to 3 minutes or until tender-crisp.
    Remove broccoli to platter.
    Add remaining 2 tablespoons oil to wok; heat until hot.
    Add meat and stir-fry until done.
    Add soy sauce.
    Add cornstarch mixture; stir until slightly thickened.
    Add broccoli and mix well.
    Serve over rice.
