Hopping John - cooking recipe

Ingredients
    1/3 cup diced bacon
    1/4 cup chopped onion
    1/4 cup chopped celery
    1 bay leaf
    1 can (1 lb.) dry black-eye peas
    1 cup water
    1 cup Minute rice
Preparation
    Fry bacon in saucepan until crisp.
    Add onion and celery; cook until onion is lightly browned.
    Add bay leaf and peas with liquid; cover and simmer 5 minutes.
    Stir in water and rice; bring to a boil, cover and simmer 5 minutes longer.
    Remove bay leaf before serving.
    Makes 4 servings.
