Healthy New England Clam Chowder - cooking recipe

Ingredients
    2 Tbsp. margarine
    1 large onion, finely chopped
    1 (8 oz.) bottle clam juice
    1 c. water
    2 to 3 medium potatoes, peeled and diced
    2 (7 1/2 oz.) cans minced clams
    2 c. nonfat milk
    1 small can evaporated milk
    salt and pepper to taste
Preparation
    Melt margarine in large saucepan.
    Add onion and saute until limp.
    Add clam juice, water and potatoes.
    Simmer until potatoes are tender.
    Add clams and milks.
    Heat slowly over low heat about 45 minutes.
    Season to taste with salt and pepper.
    Makes about 6 servings.
