Herbed Green Beans - cooking recipe
Ingredients

1 1/2 lb. fresh or frozen green beans
1 large clove garlic, minced
2/3 c. onion, sliced
3 Tbsp. olive oil
2 c. tomatoes, chopped and seeded
salt and pepper to taste
1/4 c. fresh basil
1/4 c. fresh parsley
1/2 c. freshly shredded Parmesan cheese
Preparation

Blanch beans in boiling, salted water for 2 to 3 minutes until not quite tender. Drain, refresh in cold water and dry. Saute garlic and onion in oil until tender, but not browned. Add tomatoes, beans and salt and pepper. Simmer 2 to 3 minutes until beans are tender-crisp. Add fresh herbs and cheese just before serving. Garnish with additional parsley. Yield: 8 to 10 servings.
