Favorite Uncooked Tomato Relish - cooking recipe

Ingredients
    1 lb. tomatoes, peeled and chopped
    2 lb. celery, diced
    1 large onion, chopped
    1 c. salt
    2 c. vinegar
    6 c. sugar
    2 red peppers, chopped
    3 oz. mustard seed
Preparation
    Combine tomatoes, celery, onion and salt; drain overnight in jelly bag.
    The next day, add vinegar, sugar, peppers and mustard seed.
    Stir.
    Pour into sterilized glass jars with tight lids. Allow relish to age a minimum of 2 weeks before serving. Fills 12 to 16 small bell-style jars.
