Skillet Enchiladas - cooking recipe
Ingredients

1 small brown onion, chopped
10 corn tortillas, cut into small squares
1 can corn
1 can pitted olives
1 can enchilada sauce
1/2 to 1 c. Co-Jack cheese
2 Tbsp. cooking oil
Preparation

Put oil in skillet; add chopped onion and tortillas.
Stir-fry over medium heat until tortillas are soft.
Add enchilada sauce and reduce heat.
Add corn and olives and heat through.
Add cheese and cook until melted.
Serve with refried beans.
Serves 5 to 6 people.
