Butter Coconut Pie - cooking recipe
Ingredients

1 1/2 c. sugar
2 Tbsp. all-purpose flour
1/2 c. margarine
3 eggs, beaten
1/2 c. buttermilk
1 tsp. vanilla extract
1 (3 1/2 oz.) can flaked coconut, divided
1 unbaked (9-inch) pastry shell
Preparation

Combine sugar and flour in large bowl.
Add butter, egg, buttermilk, vanilla and 2/3 of coconut.
Mix well.
Pour mixture into pie shell.
Sprinkle with remaining coconut.
Bake at 325\u00b0 for 1 hour and 5 minutes or until set.
Yields one 9-inch pie.
