Fresh Corn Relish - cooking recipe
Ingredients

3/4 c. cooked, fresh corn or thawed, frozen corn
1/4 c. finely diced green bell pepper
1/4 c. finely slivered red onion
1 Tbsp. vegetable oil
2 Tbsp. seasoned (sweet) rice vinegar
salt and pepper
1/2 c. cherry tomatoes, cut into quarters
Preparation

Toss together corn, bell pepper, onion, oil and vinegar in a medium bowl.
Season with salt and pepper.
Cover and refrigerate until ready to serve.
