Italian Eggplant - cooking recipe

Ingredients
    1 small eggplant
    1 c. soft whole wheat bread crumbs
    4 Tbsp. grated Parmesan cheese
    olive oil
Preparation
    Cut eggplant in 1/2-inch slices.
    Oil cookie sheet and coat both sides of eggplant with olive oil.
    Mix crumbs with seasoning and cheese.
    Pile generously on eggplant slices.
    Bake 15 minutes in a 400\u00b0 oven.
