Roses Cheese Cake - cooking recipe

Ingredients
    1/2 c. graham crumbs
    1 3/4 c. sugar
    2 lb. cream cheese
    1 lemon and rind
    4 eggs
Preparation
    Butter inside of pan 8 x 3-inch deep.
    Do not use spring-form pan.
    Sprinkle crumbs around bottom and sides.
    Shake out excess. Beat cheese, eggs, sugar, lemon juice, rind and vanilla on low until blended.
    Increase to high.
    Continue until thoroughly blended.
    Pour into prepared pan; shake to level.
    Set pan in slightly larger pan with 1/2-inch of water.
    (Not to touch sides.) Bake 1 1/2 to 2 hours.
    Turn off oven and let cake stay in oven 20 minutes.
    Remove cake from water and place on rack until room temperature.
    Invert over plate.
    Garnish with fruit if desired.
