Rolled Fillets Of Flounder With Lemony Broccoli - cooking recipe
Ingredients

1/4 c. melted butter
1/4 c. lemon juice
1/4 tsp. white pepper
1/8 tsp. paprika
1/2 c. cooked rice
1/2 c. shredded Cheddar cheese
1/4 lb. broccoli, steamed and chopped
1 1/2 lb. flounder
lemon wedges (for garnish)
Preparation

In a small bowl, combine butter, lemon juice, pepper and paprika; set aside.
In a larger bowl, mix rice, cheese, broccoli and 2 tablespoons of lemon butter.
On a large sheet of wax paper, lay fillets flat.
Divide rice stuffing equally and place on wide end of fillet.
Roll up; place, seam side down, in shallow baking pan coated with lemon butter.
Pour rest of sauce over fish.
Bake at 375\u00b0 for 20 minutes.
