Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant peeled, diced and cooked till tender
    1 lb mushrooms, sauteed
    1 onion, chopped and sauteed
    1 c cooked celery, sauteed
    2 c cooked rice
    1/2 c cream
    2 beaten eggs
    Buttered bread crumbs
Preparation
    Combine first 5 ingredients and place in a buttered casserole dish.
    Beat cream and eggs together and pour over eggplant mixture.
    Top with bread crumbs.
    Bake at 350 degrees for 1- 1 1/4 hours.
