Rosemary-Garlic Yams - cooking recipe

Ingredients
    9 yams or sweet potatoes, peeled (about 4 1/2 lb.)
    20 unpeeled cloves garlic, crushed
    1/2 c. olive oil
    1 Tbsp. fresh or dried rosemary
    1/2 tsp. salt
    1/4 tsp. pepper
Preparation
    Cut yams into 1-inch slices; cut each slice into quarters. Place in a large shallow pan; sprinkle with crushed garlic cloves. Add olive oil and remaining ingredients, stirring to coat.
    Bake at 450\u00b0 for 25 to 30 minutes or until tender, stirring every 10 minutes.
    Remove and discard garlic, if desired.
    Yield:
    12 servings.
