Chicken And Dumplings - cooking recipe

Ingredients
    1 large hen or fryer
    1 Tbsp. salt
    water to cover hen
    5 c. plain flour
    1 tsp. salt
    1 1/2 c. hot chicken broth (reserved after cooling hen)
Preparation
    Cook hen in salted water until tender.
    Cool, bone and set aside.
    Sift flour and salt into bowl.
    Mix flour mixture with hot broth to make dough.
    Makes five portions.
    Roll thin.
    Cut in strips and pull off pieces about 2 or 3 inches long.
    Drop into boiling chicken broth.
    Keep broth boiling until all dough has been added.
    Add boned chicken and plenty of broth.
    Boil about 3 minutes.
    Stir just enough to keep from sticking.
