Cheesy-Bacon-Baked Potatoes - cooking recipe
Ingredients

4 large baking potatoes
4 slices bacon
1/3 c. chopped onion
1/3 c. diced green pepper
2 c. sliced mushrooms
1 1/2 c. grated Cheddar cheese, divided
2 Tbsp. butter or margarine
1 egg, slightly beaten
1 tsp. salt
Preparation

Scrub potatoes.
Pat dry.
Pierce with a fork.
Bake at 425\u00b0 for 55 to 65 minutes or until soft.
Meanwhile, saute bacon in a skillet until brown.
Cool and crumble.
In 2 tablespoons of bacon drippings, cook onions and green pepper until still tender-crisp. Add mushrooms.
Continue sauteing until mushrooms are cooked.
Set aside.
