Gumbo - cooking recipe
Ingredients

1 lb. bacon
3/4 c. chopped bell pepper
2 c. chopped green onions
1 c. chopped celery
2 c. chicken or venison, cooked and chopped
2 c. smoked sausage, sliced
1 qt. tomatoes
salt and pepper to taste
garlic to taste
2 c. okra, sliced
2 lb. shrimp
1 stick margarine
1/2 c. flour
1 1/2 Tbsp. Worcestershire sauce
Preparation

Brown bacon; set aside.
Add flour to drippings and brown to make roux.
Add 1 quart water or broth to roux.
Saute onions, pepper and celery in margarine; add to roux mixture.
Add sausage and tomatoes. Add okra and cook.
Add shrimp and chicken last, cook until done.
Add gumbo file to taste.
Makes a large pot.
