Mexican Rice Dish - cooking recipe
Ingredients

1 onion, chopped
3 Tbsp. butter
1 c. long grain white rice
2 c. chicken stock
1 c. white wine
1 can diced chiles
1 red bell pepper, chopped
1/2 c. celery, chopped
1 1/2 c. sour cream
1/2 c. shredded Swiss and 1/2 c. shredded Cheddar cheese
Preparation

Saute onion in butter until tender.
Stir in rice and coat with butter.
Add stock, wine and chile peppers.
Bring to a boil and transfer to ovenproof casserole.
Cover and bake at 350\u00b0 for 15 minutes or until liquid is absorbed.
Remove from oven.
Turn oven up to 400\u00b0.
Transfer rice to bowl and add other ingredients. Spoon into liberally buttered baking dish.
Bake uncovered for 20 minutes.
