Boston Baked Beans - cooking recipe

Ingredients
    1 pt. pea beans
    1 small onion
    1/8 lb. salt pork
    1/2 tsp. salt
    1/2 tsp. dry mustard
    1 Tbsp. molasses
Preparation
    Soak beans in cold water overnight.
    Drain and put in bean pot.
    Pour boiling water over salt pork.
    Scrape the rind until white, score in 1/2-inch strips and bury in beans.
    Leave only rind showing.
    Mix salt, mustard and molasses in a cup filled with hot water and mix well.
    Pour over the beans.
    Add water to cover. Bake at 250\u00b0 to 350\u00b0 for 6 to 8 hours.
    Add more water to cover until the last hour.
    Remove cover and raise pork to top to get crisp.
