Low Calorie Banana-Nut Bread - cooking recipe
Ingredients

2 1/4 c. all-purpose flour
1 Tbsp. double-acting baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1/2 c. margarine
1/2 c. sugar
1 tsp. vanilla extract
1 egg
3/4 c. raisins
3 ripe bananas, peeled and mashed
Preparation

Preheat oven
to 350\u00b0.
Spray a 9 x 5 x 3-inch loaf pan with nonstick
cooking
spray and set aside, or use tube pan. Into
a small mixing bowl sift together flour, baking powder, salt
and cinnamon.
Set
aside.
In
a
large
mixing
bowl, combine margarine and sugar.
Using electric mixer beat until creamy and light.
Add eggs and vanilla; beat until thoroughly combined.
Add sifted
ingredients alternately with
bananas, beating
gently after each addition.
(Do not overbeat as this will toughen bread.)
