Potato Filling(Mother Parkinson, December, 1947) - cooking recipe
Ingredients

potatoes, boiled and mashed
onions, cut fine
butter
celery (if desired)
parsley, rolled or cut fine
raw eggs, beaten
salt and pepper
poultry seasoning (if desired)
stale bread
Preparation

Mash as many boiled potatoes as desired.
Add onions, cut fine, and fry in a generous amount of butter (add celery, if desired).
Add parsley, rolled or cut fine, just before adding onions and butter to the potatoes, to heat through.
Do not cook too much!!
Mix well.
Add as many beaten raw eggs as desired, depending on the amount of potatoes used.
Season well with salt and pepper (and poultry seasoning, if desired).
Add cut up stale bread (squares or small dices), removing crusts as much as desired.
