Cranberry Tapioca - cooking recipe
Ingredients

3 Tbsp. quick-cooking tapioca
1/4 tsp. salt
1 1/2 c. boiling water
2 Tbsp. orange juice
1/2 tsp. grated orange rind
1 c. cranberry sauce
1 c. heavy cream, whipped
Preparation

Mix tapioca and salt.
Add water; bring to boiling over direct heat and stir constantly. Cool.
Add orange juice, rind and cranberry sauce.
Fold in cream.
Pour into sherbet glasses and chill.
Serves 6 to 8.
