Lemon-Blueberry Bread - cooking recipe

1/3 c. margarine
1 c. granulated sugar
3 Tbsp. fresh lemon juice
2 eggs
1 1/2 c. sifted flour
1 tsp. baking powder
1 tsp. salt
1/2 c. milk
1 c. blueberries, tossed with flour
2 Tbsp. grated lemon rind
Preparation

In large bowl, mix margarine, sugar and lemon juice. Beat in eggs. In another bowl, sift flour, baking powder and salt. Add flour mixture to margarine mixture alternately with the milk, stirring just enough to blend. Stir in blueberries and grated rind. Pour batter into greased and floured loaf pan. Bake at 350\u00b0 for about an hour and 10 minutes. Cool and store, foil wrapped, for one day before slicing.
