Perfect Roast Beef - cooking recipe

roast beef (any size)
salt and pepper
Preparation

Preheat oven to 375\u00b0.
Salt and pepper (I use lots of pepper) the roast which should be at room temperature.
Place roast on rack of shallow baking pan and put in the oven.
Roast for one hour at 375\u00b0.
Then turn off oven, but do not open the oven!
If you do, you let out the heat and louse up the process.
Believe me, it works, just do not open the oven.
Allow three hours in the oven to complete cooking.
You can let it go a bit longer if you need.
About 20 minutes before you wish to serve, turn the oven back on to 300\u00b0 to warm the roast.
This will work on any size roast.
