Welsh Rarebit - cooking recipe
Ingredients

2 1/2 c. grated Cheddar cheese*
1 oz. butter
1/2 c. ale
2 tsp. prepared English mustard
salt
freshly ground black pepper
6 large slices buttered toast

*It is important always to buy Cheddar cut from the wheel. Don't ever use the packaged orange colored blocks sold in supermarkets under the name Cheddar.
Apart from the awful taste, these have been so highly processed that they don't even melt properly.
