Larry'S Scalloped Potatoes And Onion(Low-Fat; Serves 6 To 8) - cooking recipe

Ingredients
    1 onion, halved and thinly sliced
    1 large clove garlic, minced
    2 tsp. extra virgin olive oil
    3 unpeeled Russet potatoes, scrubbed and cut into 1/4-inch slices
    freshly ground pepper
    1 tsp. dried thyme or 1 Tbsp. chopped fresh thyme
    2 tsp. salt-free vegetable seasoning
    1 1/2 c. defatted sodium-reduced chicken broth
    1 Tbsp. shredded Parmesan cheese
Preparation
    Saute the onion and garlic in the oil in a nonstick skillet briefly, for about 2 to 3 minutes.
    Place the sliced potatoes into a 9-inch glass baking dish. Add the wilted onion and garlic and mix.
    Sprinkle with pepper, thyme and vegetable seasoning.
    Pour the broth over the potato mixture and sprinkle with cheese. Bake in a preheated 425\u00b0 oven for 30 to 40 minutes or until lightly browned and tender.
