File Gumbo - cooking recipe
Ingredients

1 lb. chicken gizzards
1 lb. shrimp
1 lb. hot sausage
1 lb. smoked sausage
1 doz. oysters
1 lb. chicken necks
1/2 c. diced onions
1/4 c. garlic
1/4 c. green onion
1/4 c. parsley
1 lb. ham chunks
6 crabs
salt and pepper
1/4 c. celery
Preparation

Saute onions, green onions, celery, parsley and garlic in small amount of fat in large pot.
When tender, add sausages and ham.
Simmer 15 minutes, stirring occasionally.
Add gizzards also.
Turn off fire.
Peel shrimp.
Place hulls in pan of water. Boil 20 minutes.
Strain water into pot with other ingredients. Turn on fire.
Cook slowly until meats are tender.
Add shrimp, crab, necks and oysters.
Turn off fire when necks are tender. One-half hour before serving, bring to boil.
Add 3 tablespoons file.
Mix well.
Serve over rice.
