Jambalaya - cooking recipe
Ingredients

1 Tbsp. peanut oil
1 onion, diced
4 ribs celery, diced
2 green peppers, diced
3 cloves garlic, diced
28 oz. can tomatoes
3 1/2 c. chicken broth
1/2 lb. sausage (smoky flavor prebrowned)
1 c. cooked ham, diced
2 Tbsp. parsley
2 tsp. Tabasco
1/4 c. Worcestershire sauce
3 tsp. thyme
2 c. converted rice
Preparation

Saute onion, celery, pepper and garlic in peanut oil.
Add canned tomatoes and chicken broth.
Simmer for 1 hour.
Add sausage, ham, parsley, Tabasco, Worcestershire and thyme; simmer 20 minutes more.
Add rice; cook 25 minutes more.
Best in a big kettle.
