Squash And Peanut Butter Soup - cooking recipe

Ingredients
    2 pkg. frozen butternut squash
    4 c. chicken broth
    3/4 c. tart, unsweetened applesauce
    1 large onion, quartered
    1/2 c. smooth peanut butter
    1 tsp. curry powder
    1/2 tsp. salt (if needed)
    pepper to taste (optional)
    1/2 c. cream (I use half and half)
Preparation
    Thaw frozen squash.
    In large heavy pot, bring broth to a boil.
    Add squash.
    Puree onion in processor.
    (If using blender, add applesauce and a little of the broth mixture to puree onion.) Add onion and applesauce to broth mixture.
    Reduce heat and cover pot.
    Simmer 20 minutes.
