Chicken Fried Rice - cooking recipe
Ingredients

1 1/2 c. rice
3 c. water
2 eggs, beaten
1/4 tsp. black pepper
1/4 tsp. salt
3 slices cooked bacon, crushed into very small pieces
1 lb. cooked, boneless, skinless chicken breast (small pieces)
4 large carrots or 20 mini carrots, sliced thin, 1/8-inch thick x 1/2-inch
4 Tbsp. cooking oil or bacon grease
1 can peas
4 to 8 Tbsp. soy sauce
Preparation

In a medium pot, place water,
salt and rice. Cook on stove top on high until rapid boiling. Turn down to low and simmer with lid on for 15 to 20 minutes until water is gone. Place aside. In a large skillet on medium heat, warm the oil and then add the rice and bacon, stirring constantly. Fry the rice for 5 minutes. Add eggs (stirring fast to avoid large pieces of eggs). After eggs are stirred in, add the pepper, chicken, carrots and peas. Cook on low, stirring occasionally, for 5 minutes. Add 4 to 8 tablespoons of soy sauce depending on taste. Serves 3 to 5 people.
