Zucchini, Summer Squash And Tomato Vegetable Bake - cooking recipe
Ingredients

2 Tbsp. olive oil
1 medium onion, diced
1 garlic clove, minced
1 tsp. lemon juice
1 Tbsp. minced fresh basil or 1 tsp. dried basil
1 medium summer squash, sliced
1 medium zucchini squash, sliced
4 medium tomatoes, sliced
1/2 c. Parmesan cheese
Preparation

Preheat oven to 350\u00b0.
Heat the oil in a saute pan and saute the onion and garlic together until limp (5 to 7 minutes).
Add the lemon juice and basil.
Oil a casserole and layer in the squash, tomatoes and onion mixture, ending with the tomato on top. Bake, covered, for 30 minutes.
Remove the cover.
Sprinkle the cheese on top and bake 10 minutes.
