Chicken Cantonese - cooking recipe

2 lb. choice chicken pieces
1 tsp. paprika
1 tsp. garlic salt
1/4 tsp. ground black pepper
2 Tbsp. vegetable oil
1 large onion, sliced
1 1/2 green peppers (thin strips)
1 c. diagonally sliced celery
1 1/2 c. chicken broth, divided
2 Tbsp. cornstarch
3 Tbsp. soy sauce
2 large tomatoes, cut in eighths or use halved cherry tomatoes
hot cooked rice
Preparation

Remove skin and bones from chicken.
Cut meat into thin strips.
Sprinkle with seasonings.
Saute chicken in oil 1 to 2 minutes.
Add onion, green peppers, celery and 1/2 cup broth. Cover; steam for 2 minutes.
Blend remaining broth with cornstarch and soy sauce.
Stir into chicken mixture.
Add tomatoes; cook and stir 2 minutes or until sauce is slightly thickened.
Serve over beds of fluffy rice.
Makes 6 servings.
