Hoppin' John(A Traditional New Years Special) - cooking recipe

Ingredients
    1 c. dry black-eyed beans
    4 1/2 c. water
    2 oz. salt pork
    3/4 c. onion, chopped
    1 clove garlic, minced
    1 c. rice
    1/8 tsp. dried red chili pepper
    1 tsp. salt
    1/4 tsp. black pepper
    1 bay leaf
Preparation
    Rinse beans.
    Cover with water and let soak overnight or for quick cook, bring beans and water to a boil; boil for 2 minutes. Remove from heat; cover and let stand 1 hour.
