Garlic Roasted Vegetables - cooking recipe

Ingredients
    2 Tbsp. olive oil
    1 Tbsp. grated lemon peel
    1 tsp. salt
    1/2 tsp. freshly ground pepper
    1 tsp. oregano, crumbled
    8 red potatoes (1 1/2 lb.), quartered
    8 garlic cloves
    4 medium red onions, quartered
    1 large red pepper, cut into 1/2-inch strips
Preparation
    Preheat oven to 450\u00b0.
    Combine all of the ingredients in a large bowl. Toss to coat well. Spread in jelly-roll pan.
    Roast 40 to 45 minutes.
    Makes 4 servings. Contains 285 calories.
