Carrot Cake - cooking recipe

Ingredients
    1 1/2 c. oil
    2 c. sugar
    3 eggs
    2 1/4 c. flour
    2 tsp. soda
    1 tsp. salt
    2 tsp. cinnamon
    2 tsp. vanilla
    2 c. shredded carrot
    2 c. coconut
    1 c. chopped walnuts
    1 - 8 oz. can crushed pineapple, drained
Preparation
    Beat oil, sugar and eggs until smooth.
    Mix dry ingredients together and add along with carrot, vanilla, coconut, pineapple and walnuts.
    Mix carefully until blended.
    Do not overbeat.
    Pour into greased 9 inch square pan.
    Bake at 350 degrees for 50 to 60 minutes.
