Raw Apple Icing - cooking recipe

Ingredients
    1 c. firmly packed thinly sliced tart apples, peeled
    1 c. sugar
    1 egg white
    1 Tbsp. lemon juice
Preparation
    Combine all ingredients in large bowl.
    Beat at low speed of mixer until apple is finely chopped.
    Increase speed to high as icing thickens and beat until icing is thick and smooth, about 5 minutes.
    Spread on cake.
    This icing is best served the same day it is made.
    Yields sufficient icing for two (8-inch) layers or 1 (13 x 9 1/2-inch) sheet cake.
