Los Angeles "Bicycle Shop Cafe" Garlic Chicken - cooking recipe

Ingredients
    3 oz. peanut oil
    3 oz. butter
    6 cloves garlic, peeled and chopped
    salt
    white pepper
    1 (2 1/2 lb.) roasting chicken
Preparation
    Marinate garlic a few minutes with additional 3 ounces peanut oil.
    Put salt and pepper generously on inside and outside of chicken.
    With basting brush, apply chopped garlic on inside and outside of chicken.
    Heat butter and oil in thick, large pan.
    Put in chicken and golden brown it on every side.
    Put in the oven for 45 minutes to 1 hour.
    Turn chicken around and baste every 15 minutes.
    Once cooked, remove chicken from pan, throw fat away and unglue the juices from the pan with a wooden spoon.
    Add about 6 ounces of water.
    Boil for 3 minutes or so, to reduce to the right consistency.
    Strain juices.
    Cut chicken in half and pour the sauce on top.
