Apple Muffins - cooking recipe

Ingredients
    2 c. flour
    1/4 c. plus 2 Tbsp. brown sugar
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/4 tsp. salt
    1 1/2 c. peeled, shredded Rome apple
    3/4 c. plus 2 Tbsp. buttermilk
    2 Tbsp. vegetable oil
    1 tsp. vanilla extract
Preparation
    Combine first 6 ingredients in a large bowl.
    Make a well in center of mixture.
    Combine apple and next 3 ingredients and stir well.
    Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups sprayed with cooking spray.
    Bake at 400\u00b0 for 28 minutes or until a wooden pick comes out clean.
    Remove from pans immediately.
    Let cool on a wire rack.
