Apple Pecan Cake - cooking recipe

Ingredients
    2 c. sugar
    1 1/2 c. Wesson oil
    2 tsp. vanilla
    2 eggs, well beaten
    3 c. peeled and diced apples
    juice of 1/2 lemon
    1 tsp. salt
    3 c. plain flour
    1/4 tsp. soda
    1 1/2 c. pecan pieces
Preparation
    Combine sugar, oil, vanilla, eggs, lemon juice and salt in mixing bowl; beat well.
    Sift flour and soda together; add to first mixture.
    Beat well again.
    Add apples and pecans.
    This mixture will be very stiff.
    You may have to mix it by hand.
    Bake in a tube pan for 1 hour at 325\u00b0.
    Do not overcook.
