Moroccan Chicken(4 To 6 Servings) - cooking recipe
Ingredients

1 (2 1/2 to 3 1/2 lb.) chicken, cut up
1 c. onions, chopped
2 c. carrots, sliced
3/4 c. chicken broth
1 Tbsp. lemon juice
2 tsp. lemon rind, grated
1 tsp. paprika
1/2 tsp. ginger
1/4 tsp. turmeric
1/8 tsp. cinnamon
3 c. rice, cooked
Preparation

In 3-quart casserole, place chicken with meaty portions along outside of dish.
Add onions and carrots.
Combine broth, lemon juice, lemon rind, paprika, ginger, turmeric and cinnamon.
Pour over chicken; cover.
Microwave at High power 22 to 27 minutes, until chicken is done and vegetables are tender; rotate dish 1/2 turn after 10 minutes.
Serve over rice.
