Latkes - cooking recipe

Ingredients
    6 medium potatoes, peeled and shredded
    1 onion, peeled and grated
    2 eggs, beaten
    1/2 c. all-purpose flour
    1 tsp. salt
    vegetable oil
Preparation
    Squeeze shredded potatoes between paper towels to remove the excess moisture.
    Combine potatoes and next 4 ingredients, mixing well.
    Drop heaping tablespoonfuls of potato mixture into 1 inch hot oil (325\u00b0).
    Fry until golden brown, turning once.
    Drain well. Yields 12 to 15 servings.
