Swiss Chicken - cooking recipe

2 T. flour
1 t. paprika
1 t. salt
6 skinless, boneless chicken breast halves
2 T. butter
1 t. oil
1/4 c. sherry
1 t. cornstarch
3/4 c. light cream
1/3 c. white wine
1 T. lemon juice
3/4 c. shredded Swiss cheese
Preparation

Combine flour, paprika and salt in a plastic bag. Add chicken and shake until well coated. Brown chicken on both sides in butter and oil. Add Sherry; cover and simmer about 25 minutes; or until tender. Combine cornstarch and cream, stir into pan. Cook, stirring until sauce thickens. Add lemon juice and wine. Sprinkle cheese over top of breasts, cover and let stand for 5 minutes to melt cheese.
